Balsamic vinegar of Modena Superiore
Produced according to a time-tested traditional local recipe, from selected wine vinegars and concentrated must created from top-quality grapes harvested in the area bounded by the Secchia and Panaro rivers in the heart of the province of Modena. It is aged in both 225 liter oak barriques and 500 liter barrels for four years.
Dark brown, intense color, it has a pleasant aroma and is harmoniously acidic. Its unique sweet-sour taste is well-balanced and pungent with velvety overtones.
Its use goes well beyond that of normal vinegars as a dressing to represent a complete, highly versatile ingredient in the finest cuisines.
