Ingredients: 500 g all purpose flour, 100 g butter, 200 g sugar, 4 whole eggs, 1 envelope vanilla, grated peel of 1 lemon, pinch of salt, 1 envelope baking powder, 5 T rum, olive oil.
To prepare: Beat the eggs with the sugar, then add the salt, melted butter, grated lemon peel, vanilla, baking powder, rum and flour. Refrigerate for 30 minutes, then form into walnut-size balls. Heat the oil on the stove without letting it boil and fry the dough balls until golden brown. Place the "castagnole" on paper towels to absorb the grease, sprinkle with confectioners sugar and serve.
