Colmello Bianco

Unusual. A structured white wine, aged in barrique, that blossoms into a range of subtleties, all to be discovered! It is at its best when paired with bold-flavored dishes of fish and meat, as well as soups, pasta and risottos and medium-aged cheeses.

Growing Region: Belfiore di Pramaggiore - Venice Province - Veneto Region
Altitude: 7 m A.M.S.L.
Soil: with a high presense of "caranto" a particularly hard and compact composition of clay and limestone.
Exposure: east/west
Trellis System: sylvoz
Plant Density: 2.500 plants per hectare
Age of vines: 30 years



Vinification

A brief maceration of the grapes, at controlled temperature, was followed by a gentle pressing and fermentation in barriques, using selected yeasts. The wine was then racked and left on fine dregs for about 4 months. After being run off into Tronchais barriques, the wine was left to age for 12 months. The refinement is completing in the months following bottling. 



Tasting notes

Colour: straw yellow.
Bouquet: vinous; delicate, with a hint of vanilla mixed with the scent of the burnt wood, from the vinification and aging in casks.
Taste: great structure and longevity. Balanced taste, full, warm, velvety.  A slight touch of acidity. On drinking, it reveals all its flavours, in  particular cocoa, cinnamon and nutmeg.

Serving suggestions

Hot and distinctive fish and white meat dishes. A great drink with soups, pasta and risotto, as well as with medium mature cheeses.
