Passito 'Solamini et amicis'

"Solamini ed amicis": in order to promote well-being in ourselves and our friends we propose a "nectar", a concentrated elixir of selected grapes left to dry naturally on a cane frame for six months, then pressed and vinified after March. A meditation wine. A perfect compliment to pastries, to full-flavored, aged cheeses or with dark chocolate.

Altitude: 9 m A.M.S.L.
Soil: Motta di Livenza Vineyard Soil - flood plain origins of natural clay and limestone.
Exposure: east/west
Trellis System: sylvoz
Plant Density: 2.500 plants per hectare
Age of vines: 35 years 

.Vinification

The slow withering process is followed by light pressing. Then there is the initial fermentation in stainless steel, the transfer into barriques where first the slow fermentation is completed and then the aging for 4 years. It was bottled in Fall 2010.

.Tasting notes

Colour: bright, amber-colored, it has a rich, oily consistency.
Bouquet: its complex, yet delicate, aroma is resplendent with apricot, raisin, fig and hazelnut against an elegant vanilla background, interlaced with honeyed, toasted overtones.
Taste: warm and enveloping, on the palate it offers the same rich olfactory complexity of dried fruit with even a slight mineral hint. Sweetness and alcohol content are balanced by just the right touch of freshness.
Caressingly velvety tannic, lingering aftertaste.

.Serving suggestions

A meditation wine to be savored on its own. A perfect compliment to pastries. Excellent at the beginning of a meal with foie gras; superb accompaniment to full-flavored, aged cheeses; try it on pecorino cheese with a few drops of chestnut honey or as the perfect pairing with dark chocolate.
