CARAMELIZED MANGO

Ingredients: 1 ripe, but firm mango, 2 tbs sugar, 1 egg, 100 g all-purpose flour, confectioners sugar.
To prepare: Peel the mango and cut into 3 cm x ½ cm strips. Caramelize the sugar in a non-stick pan and as soon as it begins to color, add the mango. Cook for 5 minutes. Separately, prepare a dough with the egg and flour. Roll out the dough and cut into irregular squares. Deep-fry the pieces and sprinkle with confectioners sugar. Arrange the still-warm mango on individual dessert plates and top with 2 dough squares. Serve.
