SUNDAY SPECIAL CAKE

Ingredients: 150 g all-purpose flour, 150 g potato flour, 250 g fresh heavy cream, 3 eggs, 250 g sugar, 4 tbsp rum, grated rind of 1 lemon, juice of 1 lemon, 4 tsp yeast, salt.
To prepare: Beat the egg yolks together with the sugar until light and fluffy, add the salt and heavy cream and continue to beat using an electric mixer. Add the flour, potato flour and baking powder. When the batter is well-mixed, fold in the egg whites (previously beaten until stiff). Pour the mixture into a cake pan lined with baking paper. Bake in a 180°C oven for 45 minutes.
