MONICA'S CAKE

Ingredients: 1 200 g roll of ready-made puff pastry, 200 g white chocolate, 2 eggs, 250 g fresh whipping cream, 300 g strawberries.
To prepare: Melt the white chocolate with 2 tbs whipping cream in a double boiler; let cool and add the egg yolks. Separately, beat the egg whites until stiff with a pinch of salt; beat the whipping cream until stiff. To the chocolate mixture, first fold in the egg whites and then the whipped cream. Place in the refrigerator for 4 hours.
Roll out the puff pastry, place on a baking paper-lined baking sheet. Prick the entire surface of the puff pastry sheet with a fork and cover with a second sheet of baking paper. Evenly spread dried beans over the sheet to avoid the pastry over-puffing during baking. Bake in a 220°C oven for 20 minutes.
When cooled, spread the cream in a thick layer over the puff pastry sheet and garnish with sliced strawberries.
