Serves 6: 1 kg of a tender cut of beef, one finely-sliced onion, 6-8 sage leaves, ⅓ cup vinegar, water, garlic, Moletto Extra-virgin olive oil Integrale, salt.
To prepare: Place the meat in a dish and add the onion, sage, vinegar and enough water to cover the meat. Let marinate for 2-3 hours.
Cut the meat in 1½-in. cubes and place in a pan in which 2 garlic cloves have been sautéd in extra-virgin olive oil. Add the marinade and braise until the meat is tender and the marinade has evaporated. Salt to taste. Before serving, drizzle with extra-virgin olive oil.
Serve with polenta.
